Getting it done:

Wash the vegetables carefully so that its completely clean. Roughly chop them into bite-sized pieces. After chopping the lettuce, toss it with half of the dressing and season generously. Add the remaining
vegetables and toss well. Season the salad with the remaining dressing. Chop and add the eggs to the well-mixed and seasoned vegetables. If you like it crunchy, sprinkle with roasted pumpkin seeds or pepitas.

Enjoy the salad as it is in bowl or serve it as a sandwich side dish. Wrap it in a tortilla for a wholesome mean or stuff it between breads.

Blueberry Pancake

Getting it done:

  • Mix the flour, baking powder and kosher salt in a medium bowl and stir until well combined well
    until well mixed.
  •  In a sperate bowl mix the eggs, vanilla, honey/maple syrup and milk. Stir until everything is well
    mixed.
  • Now pour it on the flour bowl and mix till there are no streaks of flour left.
  • Carefully fold in the blueberries.
  • Heat a large nonstick skillet over medium heat. Add butter or cooking spray.
  • Use a 1/4 cup measure or a medium sized ladle and pour the batter into the skillet. (You can
    make 3 pancakes per pan in a 12-inch skillet)
  • Lower heat to just below medium and cook the pancakes on one side until bubbles begin to
    form all over the top of the pancake.
  • Toss and cook the other side for a minute so. (until set and cooked)
  •  Remove the pancake from skillet and repeat with rest of the batter.
  •  Serve hot with maple syrup or honey

Recipe 3

Egg Prawn Curry

Ingredients:

Getting it done:

Clean prawn and keep aside.

Heat the oil in a saucepan, add mustard seeds, ani seeds and let it splutter. Add the onion and fry until golden. Add ginger garlic paste. Add remaining spices and fry gently for two minutes, stirring
occasionally; if the mixture becomes too dry, add 1 tablespoon water. Add the tomato paste, mix well,
then add salt to taste. Cover and simmer for 10 minutes.

Stir in the prawns, cover, and cook for 5 minutes. Add the boiled egg and cover it in low flame. After
few minutes check. Prawn would have shrunk and water would have come from prawn. Let it simmer a minute or two.


Now stir in the coconut milk. Let the mixture come to simmering point once more, then serve
immediately with steamed Basmati rice or Pilau rice.
